Instructions
- In a large pot, combine the chopped pineapple and sugar. Let it sit for 1 hour to allow the pineapple to release its juices.
- After 1 hour, place the pot on the stovetop over medium heat. Stir in the lemon juice.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, stirring occasionally, until the jam thickens.
- Once the jam reaches the desired consistency, remove it from the heat and let it cool.
- Transfer the jam to sterilized jars and seal. Store in the refrigerator.
