Pineapple Rum Ribs

Ingredients
- 2 racks of pork ribs
- 1 cup pineapple juice
- 1/2 cup dark rum
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- Place the ribs in a roasting pan and season with salt and pepper.
- In a small saucepan, combine the pineapple juice, rum, brown sugar, garlic, and ginger. Simmer over medium heat for 10 minutes, stirring occasionally, until the glaze thickens.
- Brush the glaze over the ribs, covering them completely.
- Cover the roasting pan with foil and bake for 1.5 hours, then uncover and bake for an additional 30 minutes, basting the ribs with the pan juices every 10 minutes.
- Once the ribs are tender and caramelized, remove them from the oven and let them rest for 10 minutes before slicing and serving.
