Pineapple Rum Ribs

Ingredients

  • 2 racks of pork ribs
  • 1 cup pineapple juice
  • 1/2 cup dark rum
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Place the ribs in a roasting pan and season with salt and pepper.
  3. In a small saucepan, combine the pineapple juice, rum, brown sugar, garlic, and ginger. Simmer over medium heat for 10 minutes, stirring occasionally, until the glaze thickens.
  4. Brush the glaze over the ribs, covering them completely.
  5. Cover the roasting pan with foil and bake for 1.5 hours, then uncover and bake for an additional 30 minutes, basting the ribs with the pan juices every 10 minutes.
  6. Once the ribs are tender and caramelized, remove them from the oven and let them rest for 10 minutes before slicing and serving.
