Pineapple Teriyaki Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 fresh pineapple, diced
- 1 red bell pepper, diced
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup teriyaki sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, diced pineapple, diced red bell pepper, chopped cilantro, and chopped green onions.
- In a small bowl, whisk together the teriyaki sauce, rice vinegar, and sesame oil. Pour the dressing over the quinoa mixture and toss to combine. Season with salt and pepper to taste.
