Pineapple Teriyaki Tofu Stir-fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of pineapple chunks
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 1 cup of snap peas
- 1/4 cup of teriyaki sauce
- 2 tablespoons of soy sauce
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1 tablespoon of cornstarch
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Press the tofu to remove excess moisture, then cut it into cubes.
- In a small bowl, whisk together the teriyaki sauce, soy sauce, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
- Heat the remaining tablespoon of vegetable oil in the skillet.
- Add the garlic, onion, and bell peppers, and cook until they begin to soften.
- Add the snap peas and pineapple chunks to the skillet, and cook for an additional 2-3 minutes.
- Return the tofu to the skillet and pour the teriyaki sauce mixture over the stir-fry.
- Cook, stirring constantly, until the sauce thickens and coats the ingredients.
- Season with salt and pepper to taste.
