Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup pineapple juice
  • 1 teaspoon vanilla extract
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9x9 inch baking pan.
  3. Sprinkle the brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices and cherries on top of the brown sugar.
  5. In a separate bowl, mix the flour, granulated sugar, baking powder, and salt.
  6. Add the milk, pineapple juice, vanilla extract, and eggs to the dry ingredients, and mix until smooth.
  7. Pour the batter over the pineapple and cherries in the baking pan.
  8. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for 5 minutes, then invert it onto a serving platter.
