Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a medium bowl, mix together the flour and confectioners' sugar. Cut in 3/4 cup of cold butter until the mixture resembles coarse crumbs. Press into the prepared pan.
  3. Bake for 20 minutes in the preheated oven, or until firm and golden.
  4. In a large bowl, beat eggs until light and frothy. Mix in the corn syrup, granulated sugar, 2 tablespoons melted butter, vanilla, and salt until well blended. Stir in the pecans. Spread the filling over the baked crust.
  5. Bake for an additional 20 to 25 minutes in the preheated oven, or until set. Allow to cool completely on a wire rack before cutting into bars.
