Pineville Pecan Pie Bars
Pineville Pecan Pie Bars are a delightful Mecklenburg treat that combines the rich flavors of pecan pie with the convenience of a handheld bar. These bars are perfect for a sweet snack or dessert, and they are sure to be a hit at any gathering.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 3/4 cup unsalted butter, cold and cubed
- 3 large eggs
- 1 cup light corn syrup
- 1 cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups pecan halves
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the flour and confectioners' sugar. Cut in 3/4 cup of cold butter until the mixture resembles coarse crumbs. Press into the prepared pan.
- Bake for 20 minutes in the preheated oven, or until firm and golden.
- In a large bowl, beat eggs until light and frothy. Mix in the corn syrup, granulated sugar, 2 tablespoons melted butter, vanilla, and salt until well blended. Stir in the pecans. Spread the filling over the baked crust.
- Bake for an additional 20 to 25 minutes in the preheated oven, or until set. Allow to cool completely on a wire rack before cutting into bars.
