Ping Moo (grilled Pork Skewers)
Ping Moo, or Grilled Pork Skewers, is a popular street food in Laos that is flavorful and easy to prepare. The pork is marinated in a delicious blend of herbs and spices before being grilled to perfection.
Ingredients
- 1.5 lbs pork shoulder, cut into 1-inch cubes
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 1 lemongrass stalk, finely minced
- 1/4 cup soy sauce
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1/2 tsp black pepper
- 1/4 cup vegetable oil
- Bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine garlic, shallots, lemongrass, soy sauce, fish sauce, sugar, black pepper, and vegetable oil to make the marinade.
- Add the pork cubes to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated pork cubes onto the soaked bamboo skewers.
- Grill the pork skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and slightly charred.
- Remove from the grill and let rest for a few minutes before serving.
