Ping Moo (grilled Pork Skewers)

Ingredients

  • 1.5 lbs pork shoulder, cut into 1-inch cubes
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 lemongrass stalk, finely minced
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine garlic, shallots, lemongrass, soy sauce, fish sauce, sugar, black pepper, and vegetable oil to make the marinade.
  2. Add the pork cubes to the marinade, making sure each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated pork cubes onto the soaked bamboo skewers.
  5. Grill the pork skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and slightly charred.
  6. Remove from the grill and let rest for a few minutes before serving.
