Piononos Passion (Pasión de Piononos)

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 cup sugar
  • 1/3 cup passion fruit juice
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup passion fruit pulp

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 10x15 inch jelly roll pan.
  2. In a small bowl, mix together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the eggs and sugar until thick and pale. Stir in the passion fruit juice. Gradually add the flour mixture, mixing until just combined.
  4. Pour the batter into the prepared pan and spread it out evenly. Bake for 15 minutes, or until the cake springs back when lightly touched.
  5. While the cake is baking, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in the passion fruit pulp.
  6. Once the cake is done, turn it out onto a clean kitchen towel dusted with powdered sugar. Carefully roll up the cake using the towel and let it cool completely.
  7. Unroll the cooled cake and spread the passion fruit cream evenly over the surface. Roll the cake back up without the towel.
  8. Prepare the glaze by mixing powdered sugar with a little water until smooth. Drizzle the glaze over the piononos.
  9. Slice and serve the Pasión de Piononos with a sprinkle of powdered sugar on top.
