Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the cooked rice, chopped onion, diced tomatoes, parsley, mint, olive oil, tomato paste, oregano, salt, and pepper. Mix well.
- Stuff the bell peppers with the rice mixture and place them in a baking dish.
- Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes until the peppers are tender.
- Remove from the oven and let them cool for a few minutes before serving.
