Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 onion, sliced
- 1 tomato, chopped
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 2 hot peppers, sliced
- 1/4 cup vegetable oil
- Salt and pepper to taste
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup water
- 4 potatoes, cut into thick slices and fried
- 2 eggs, fried
Instructions
- Heat the vegetable oil in a large pan or wok over high heat.
- Add the beef slices and cook until browned, then remove from the pan and set aside.
- In the same pan, add the onion, tomato, bell pepper, garlic, and hot peppers. Stir-fry for a few minutes until the vegetables are tender-crisp.
- Return the beef to the pan and season with salt and pepper.
- In a small bowl, mix the soy sauce, vinegar, and water. Pour the sauce over the beef and vegetables, stirring to combine.
- Cook for a few more minutes until everything is heated through and the sauce has thickened slightly.
- Serve the spicy beef stir-fry over a bed of fried potatoes and top with fried eggs.
