Pique a lo Macho (Spicy Beef Stir-Fry)

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 onion, sliced
  • 1 tomato, chopped
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 hot peppers, sliced
  • 1/4 cup vegetable oil
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup water
  • 4 potatoes, cut into thick slices and fried
  • 2 eggs, fried

Instructions

  1. Heat the vegetable oil in a large pan or wok over high heat.
  2. Add the beef slices and cook until browned, then remove from the pan and set aside.
  3. In the same pan, add the onion, tomato, bell pepper, garlic, and hot peppers. Stir-fry for a few minutes until the vegetables are tender-crisp.
  4. Return the beef to the pan and season with salt and pepper.
  5. In a small bowl, mix the soy sauce, vinegar, and water. Pour the sauce over the beef and vegetables, stirring to combine.
  6. Cook for a few more minutes until everything is heated through and the sauce has thickened slightly.
  7. Serve the spicy beef stir-fry over a bed of fried potatoes and top with fried eggs.
