Pique Macho (bolivian Beef And Potato Stew)

Ingredients
- 1 lb beef, thinly sliced
- 4 large potatoes, cut into thick fries
- 1 onion, sliced
- 2 tomatoes, sliced
- 1 bell pepper, sliced
- 2 hot peppers, sliced
- 4 hard-boiled eggs, halved
- 1 cup cooked sausage, sliced
- 1/4 cup vegetable oil
- 1/4 cup vinegar
- 2 tablespoons soy sauce
- 1 tablespoon ground cumin
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the potatoes and fry until golden brown and crispy. Remove the potatoes and set aside.
- Using the same skillet, sauté the onion, tomatoes, bell pepper, and hot peppers until softened.
- Return the beef and potatoes to the skillet. Add the cooked sausage, vinegar, soy sauce, and ground cumin. Season with salt and pepper to taste. Cook for an additional 5 minutes, stirring to combine all the ingredients.
- Transfer the pique macho to a serving platter and garnish with the hard-boiled eggs.
