Ingredients

  • Fresh fish fillets
  • Taro root, peeled and diced
  • Coconut milk

  • Curry powder
  • Turmeric
  • Vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add curry powder and turmeric. Stir to combine.
  4. Add diced taro and cook for 5 minutes.
  5. Pour in coconut milk and bring to a simmer.
  6. Add fresh fish fillets and diced tomatoes. Simmer for 15-20 minutes until the fish is cooked through.
  7. Season with salt and pepper to taste.
  8. Serve the Pis na Kaukau Kari hot with steamed rice.
