Pisco Sour Sorbet

Ingredients

  • 1 cup Pisco
  • 1 cup freshly squeezed lime juice
  • 1 cup sugar
  • 1 cup water
  • 2 egg whites

Instructions

  1. In a small saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let it cool.
  2. In a large bowl, mix the Pisco, lime juice, and the cooled sugar syrup. Stir well to combine.
  3. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the Pisco mixture.
  4. Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, use a fork to scrape and stir the mixture to create a light and fluffy texture. Repeat this process for about 4 hours, or until the sorbet is fully frozen.
  5. Once the sorbet is frozen, scoop it into serving dishes and garnish with a slice of lime or a sprig of mint.
