Ingredients

  • 2 tbsp olive oil
  • 4 large onions, thinly sliced
  • 1 tsp sugar
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 sheet of puff pastry
  • 12 anchovy fillets
  • 1/4 cup black olives

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the onions and cook until soft and golden, about 20 minutes.
  2. Sprinkle the sugar, thyme, salt, and pepper over the onions and continue to cook for another 10 minutes, stirring occasionally.
  3. Preheat the oven to 400°F (200°C).
  4. Roll out the puff pastry and place it on a baking sheet. Prick the pastry with a fork.
  5. Spread the caramelized onions evenly over the pastry, leaving a small border around the edges.
  6. Arrange the anchovy fillets in a crisscross pattern over the onions, then place the black olives in the gaps.
  7. Bake for 15-20 minutes, or until the pastry is golden and crisp.
  8. Let the pissaladière cool for a few minutes before slicing and serving.
