Pissaladière niçoise is a traditional dish from the Occitan cuisine, specifically from the city of Nice in the south of France. It is a delicious onion tart topped with anchovies, olives, and herbs, making it a perfect appetizer or light meal.

Ingredients

  • 2 lbs onions, thinly sliced
  • 4 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup black olives, pitted
  • 8 anchovy fillets
  • 2 sprigs of thyme
  • 1 sheet of puff pastry

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions, sugar, salt, and pepper. Cook, stirring occasionally, for about 30 minutes until the onions are soft and caramelized.
  3. Roll out the puff pastry and place it on a baking sheet. Prick the pastry with a fork.
  4. Spread the caramelized onions evenly over the pastry, leaving a small border around the edges.
  5. Arrange the anchovy fillets in a crisscross pattern on top of the onions. Place the olives in between the anchovies.
  6. Strip the thyme leaves from the sprigs and sprinkle them over the tart.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crispy.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
