Pissaladière Niçoise (Pissaladière niçoise)
Pissaladière niçoise is a traditional dish from the Occitan cuisine, specifically from the city of Nice in the south of France. It is a delicious onion tart topped with anchovies, olives, and herbs, making it a perfect appetizer or light meal.
Ingredients
- 2 lbs onions, thinly sliced
- 4 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup black olives, pitted
- 8 anchovy fillets
- 2 sprigs of thyme
- 1 sheet of puff pastry
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the onions, sugar, salt, and pepper. Cook, stirring occasionally, for about 30 minutes until the onions are soft and caramelized.
- Roll out the puff pastry and place it on a baking sheet. Prick the pastry with a fork.
- Spread the caramelized onions evenly over the pastry, leaving a small border around the edges.
- Arrange the anchovy fillets in a crisscross pattern on top of the onions. Place the olives in between the anchovies.
- Strip the thyme leaves from the sprigs and sprinkle them over the tart.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crispy.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
