Pistachio Cookies

Ingredients
- 1 cup of pistachios, chopped
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of coconut oil
- 1 cup of granulated sugar
- 1/4 cup of almond milk
- 1 teaspoon of vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, baking powder, and salt.
- In another bowl, cream the coconut oil and sugar together. Add the almond milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined.
- Fold in the chopped pistachios.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten the balls with the back of a fork.
- Bake for 12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
