Pistachio Cookies

Ingredients

  • 1 cup of pistachios, chopped
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of coconut oil
  • 1 cup of granulated sugar
  • 1/4 cup of almond milk
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking powder, and salt.
  3. In another bowl, cream the coconut oil and sugar together. Add the almond milk and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Fold in the chopped pistachios.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Flatten the balls with the back of a fork.
  8. Bake for 12 minutes or until the edges are golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
