Ingredients

  • 1 cup shelled pistachios
  • 1 cup water
  • 1 cup granulated sugar

Instructions

  1. In a saucepan, combine the shelled pistachios and water. Bring to a boil, then reduce heat and simmer for 5 minutes.
  2. Remove from heat and let the pistachio mixture cool for 10 minutes.
  3. Strain the pistachio mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible.
  4. Return the strained liquid to the saucepan and add the granulated sugar.
  5. Bring the mixture to a simmer, stirring until the sugar is completely dissolved.
  6. Remove from heat and let the pistachio syrup cool completely before transferring to a bottle or jar for storage.
