Ingredients

  • 4 chicken breasts, skinless and boneless
  • 1 can (13.5 oz) coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 teaspoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine coconut milk, lime juice, lime zest, garlic, onion, ginger, soy sauce, brown sugar, salt, and pepper.
  2. Add the chicken breasts to the marinade and let them marinate for at least 30 minutes.
  3. Heat a large skillet over medium heat and add the marinated chicken breasts along with the marinade.
  4. Cook for 15-20 minutes, turning the chicken occasionally, until the chicken is cooked through and the sauce has thickened.
  5. Serve the Coconut Lime Chicken hot, garnished with additional lime zest and chopped cilantro if desired.
