Ingredients
- 4 chicken breasts, skinless and boneless
- 1 can (13.5 oz) coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 1 teaspoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
Instructions
- In a bowl, combine coconut milk, lime juice, lime zest, garlic, onion, ginger, soy sauce, brown sugar, salt, and pepper.
- Add the chicken breasts to the marinade and let them marinate for at least 30 minutes.
- Heat a large skillet over medium heat and add the marinated chicken breasts along with the marinade.
- Cook for 15-20 minutes, turning the chicken occasionally, until the chicken is cooked through and the sauce has thickened.
- Serve the Coconut Lime Chicken hot, garnished with additional lime zest and chopped cilantro if desired.
