Pisupo (island Herb Roasted Chicken)
Pisupo, or Island Herb Roasted Chicken, is a traditional dish from the Solomon Islands that features succulent roasted chicken infused with aromatic island herbs.
Ingredients
- 1 whole chicken, about 4 lbs
- 2 tablespoons coconut oil
- 1 tablespoon freshly chopped lemongrass
- 1 tablespoon freshly chopped ginger
- 1 tablespoon freshly chopped garlic
- 1 tablespoon freshly chopped cilantro
- 1 tablespoon freshly chopped mint
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken and pat it dry with paper towels.
- In a small bowl, mix the coconut oil, lemongrass, ginger, garlic, cilantro, and mint to create a herb paste.
- Gently loosen the skin of the chicken and rub the herb paste under the skin and all over the chicken.
- Season the chicken with salt and pepper.
- Place the chicken on a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
