Pisupo, or Island Herb Roasted Chicken, is a traditional dish from the Solomon Islands that features succulent roasted chicken infused with aromatic island herbs.

Ingredients

  • 1 whole chicken, about 4 lbs
  • 2 tablespoons coconut oil
  • 1 tablespoon freshly chopped lemongrass
  • 1 tablespoon freshly chopped ginger
  • 1 tablespoon freshly chopped garlic
  • 1 tablespoon freshly chopped cilantro
  • 1 tablespoon freshly chopped mint
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. In a small bowl, mix the coconut oil, lemongrass, ginger, garlic, cilantro, and mint to create a herb paste.
  4. Gently loosen the skin of the chicken and rub the herb paste under the skin and all over the chicken.
  5. Season the chicken with salt and pepper.
  6. Place the chicken on a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 10 minutes before carving and serving.
