Pisupo (island Style Chicken Satay)
Pisupo, also known as Island Style Chicken Satay, is a traditional dish from the Solomon Islands that features tender chicken marinated in a flavorful sauce and grilled to perfection. This dish is perfect for a tropical island feast or a summer barbecue.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into strips
- 1/2 cup coconut milk
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon lime juice
- 1/4 teaspoon cayenne pepper (optional)
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, and cayenne pepper. Mix well to make the marinade.
- Add the chicken strips to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken strips onto the soaked skewers.
- Grill the chicken skewers for 5-7 minutes on each side, or until fully cooked and slightly charred.
- Serve the Pisupo hot with rice and a side of peanut sauce for dipping.
