Pisupo (island Style Chicken Satay)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into strips
  • 1/2 cup coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon lime juice
  • 1/4 teaspoon cayenne pepper (optional)
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, ginger, lime juice, and cayenne pepper. Mix well to make the marinade.
  2. Add the chicken strips to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken strips onto the soaked skewers.
  4. Grill the chicken skewers for 5-7 minutes on each side, or until fully cooked and slightly charred.
  5. Serve the Pisupo hot with rice and a side of peanut sauce for dipping.
