Ingredients

  • 1 lb mixed seafood (such as shrimp, scallops, and white fish)
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, diced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.

  3. Add the diced potatoes and seafood to the pot, then pour in the fish or vegetable broth. Bring to a simmer and cook until the potatoes are tender and the seafood is cooked through.
  4. In a small bowl, whisk together the heavy cream and flour until smooth. Pour this mixture into the pot, stirring constantly, and cook until the chowder has thickened slightly.
  5. Season the chowder with salt and pepper to taste. Serve hot, garnished with the crispy bacon and fresh parsley.
