Pitcairn Pineapple Fried Rice

Ingredients

  • 2 cups cooked rice
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cashews

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  3. Heat the remaining vegetable oil in the skillet and add the carrots. Cook for 2-3 minutes until slightly softened.

  5. Pour the soy sauce over the rice mixture and stir until well coated.
  6. Add the scrambled eggs back to the skillet and stir to combine with the rice mixture.
  7. Remove the skillet from the heat and stir in the chopped green onions and cashews.
