Ingredients

  • 2 sheets of puff pastry
  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon almond extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the almond flour, sugar, softened butter, and almond extract to make the almond cream filling.
  3. Roll out one sheet of puff pastry and place it on a baking sheet lined with parchment paper.
  4. Spoon the almond cream filling onto the center of the puff pastry, leaving a border around the edges.
  5. Brush the edges of the puff pastry with the beaten egg.
  6. Roll out the second sheet of puff pastry and place it over the almond cream filling.
  7. Press the edges of the two puff pastry sheets together to seal the pithivier.
  8. Brush the top of the pithivier with the remaining beaten egg.
  9. Using a sharp knife, score the top of the pithivier in a decorative pattern.
  10. Bake in the preheated oven for 25-30 minutes, or until the pithivier is golden brown and puffed up.
  11. Allow the pithivier to cool slightly before serving.
