Pithivier

Ingredients
- 2 sheets of puff pastry
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon almond extract
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the almond flour, sugar, softened butter, and almond extract to make the almond cream filling.
- Roll out one sheet of puff pastry and place it on a baking sheet lined with parchment paper.
- Spoon the almond cream filling onto the center of the puff pastry, leaving a border around the edges.
- Brush the edges of the puff pastry with the beaten egg.
- Roll out the second sheet of puff pastry and place it over the almond cream filling.
- Press the edges of the two puff pastry sheets together to seal the pithivier.
- Brush the top of the pithivier with the remaining beaten egg.
- Using a sharp knife, score the top of the pithivier in a decorative pattern.
- Bake in the preheated oven for 25-30 minutes, or until the pithivier is golden brown and puffed up.
- Allow the pithivier to cool slightly before serving.
