Piti (azerbaijani Lamb Stew)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 potato, diced
  • 1 cup chickpeas, soaked overnight
  • 1/2 cup rice
  • 1 tomato, chopped
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 6 cups water

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the chopped onion and cook until softened.
  3. Stir in the diced carrots, potato, soaked chickpeas, and rice.
  4. Add the chopped tomato, turmeric, cumin, coriander, salt, and pepper.
  5. Pour in the water and bring the stew to a boil.
  6. Reduce the heat and simmer for 2-3 hours, until the lamb is tender and the flavors have melded together.
