Piti (azerbaijani Lamb Stew)
Piti is a traditional Azerbaijani lamb stew that is rich in flavor and history. This hearty dish is a staple in Azerbaijani cuisine and is perfect for warming up on a cold day.
Ingredients
- 1 lb lamb, cut into chunks
- 1 onion, finely chopped
- 2 carrots, diced
- 1 potato, diced
- 1 cup chickpeas, soaked overnight
- 1/2 cup rice
- 1 tomato, chopped
- 1 tsp turmeric
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- Salt and pepper to taste
- 6 cups water
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the chopped onion and cook until softened.
- Stir in the diced carrots, potato, soaked chickpeas, and rice.
- Add the chopped tomato, turmeric, cumin, coriander, salt, and pepper.
- Pour in the water and bring the stew to a boil.
- Reduce the heat and simmer for 2-3 hours, until the lamb is tender and the flavors have melded together.
