Pizza De Moqueca (moqueca Pizza)

Ingredients
- 1 pre-made pizza dough
- 1 cup coconut milk
- 1 lb white fish fillets, such as cod or tilapia
- 1 onion, sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tomato, diced
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- 1/4 cup green onions, chopped
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and red bell pepper, and sauté until softened.
- Add the minced garlic to the skillet and cook for another minute.
- Pour in the coconut milk and bring to a simmer.
- Add the fish fillets to the skillet and let them cook in the coconut milk mixture for about 5 minutes, or until they are cooked through.
- While the fish is cooking, preheat the oven to 425°F (220°C) and roll out the pizza dough on a baking sheet.
- Once the fish is cooked, carefully transfer it to a plate and flake it into bite-sized pieces.
- Add the diced tomato, lime juice, cilantro, and green onions to the skillet with the coconut milk mixture. Season with salt and pepper to taste.
- Spoon the moqueca mixture over the rolled-out pizza dough, spreading it evenly.
- Place the pizza in the preheated oven and bake for 12-15 minutes, or until the crust is golden and crispy.
- Remove the pizza from the oven, slice, and serve hot.
