Pla Meuk Larb (spicy Squid Salad)

Ingredients
- 1 lb fresh squid, cleaned and sliced
- 1/4 cup fresh lime juice
- 2 tbsp fish sauce
- 1 tsp sugar
- 1/2 cup red onion, thinly sliced
- 1/4 cup green onions, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup roasted rice powder
- 1-2 tbsp dried chili flakes
- Salt to taste
Instructions
- In a pot of boiling water, blanch the squid for 1-2 minutes until just cooked. Drain and set aside.
- In a large bowl, mix together lime juice, fish sauce, sugar, and dried chili flakes.
- Add the cooked squid, red onion, green onions, mint, cilantro, and roasted rice powder to the bowl. Toss to combine.
- Season with salt to taste and adjust the flavors if needed.
- Serve the Pla Meuk Larb immediately as a refreshing and spicy salad.
