Pla Meuk Larb (spicy Squid Salad)

Ingredients

  • 1 lb fresh squid, cleaned and sliced
  • 1/4 cup fresh lime juice
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup roasted rice powder
  • 1-2 tbsp dried chili flakes
  • Salt to taste

Instructions

  1. In a pot of boiling water, blanch the squid for 1-2 minutes until just cooked. Drain and set aside.
  2. In a large bowl, mix together lime juice, fish sauce, sugar, and dried chili flakes.
  3. Add the cooked squid, red onion, green onions, mint, cilantro, and roasted rice powder to the bowl. Toss to combine.
  4. Season with salt to taste and adjust the flavors if needed.
  5. Serve the Pla Meuk Larb immediately as a refreshing and spicy salad.
