Ingredients
- 4 fillets of white fish (such as snapper or cod)
- 4 large banana leaves
- 4 cloves garlic, minced
- 2 red chilies, thinly sliced
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 teaspoon grated ginger
- 1 teaspoon chopped cilantro
- Salt to taste
Instructions
- Rinse the fish fillets and pat them dry with paper towels.
- Cut the banana leaves into large squares and briefly pass them over an open flame to soften them.
- Place a fish fillet on each banana leaf square.
- In a bowl, mix together the garlic, chilies, fish sauce, lime juice, sugar, ginger, and cilantro. Spoon this mixture over the fish fillets.
- Wrap the banana leaves around the fish to form neat parcels and secure with toothpicks.
- Steam the fish parcels for 20-25 minutes until the fish is cooked through.
- Serve the Pla Neung Bai Toei hot, still wrapped in the banana leaves.
