Ingredients

  • 4 fillets of white fish (such as snapper or cod)
  • 4 large banana leaves

  • 2 red chilies, thinly sliced

  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon chopped cilantro
  • Salt to taste

Instructions

  1. Rinse the fish fillets and pat them dry with paper towels.
  2. Cut the banana leaves into large squares and briefly pass them over an open flame to soften them.
  3. Place a fish fillet on each banana leaf square.
  4. In a bowl, mix together the garlic, chilies, fish sauce, lime juice, sugar, ginger, and cilantro. Spoon this mixture over the fish fillets.
  5. Wrap the banana leaves around the fish to form neat parcels and secure with toothpicks.
  6. Steam the fish parcels for 20-25 minutes until the fish is cooked through.
  7. Serve the Pla Neung Bai Toei hot, still wrapped in the banana leaves.
