Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed

- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and cold cubed butter. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
- Sprinkle cold water over the flour mixture, 1 tablespoon at a time, and gently mix until the dough comes together. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a separate bowl, mix the pitted cherries, sugar, cornstarch, and almond extract until well combined.
- Preheat the oven to 375°F (190°C).
- Roll out one disc of the chilled dough on a floured surface to fit a 9-inch pie dish. Place the rolled dough into the pie dish.
- Pour the cherry filling into the prepared pie crust.
- Roll out the second disc of dough and place it over the cherry filling. Trim and crimp the edges to seal the pie.
- Brush the top crust with the beaten egg for a golden finish.
- Make a few small slits on the top crust to allow steam to escape during baking.
- Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool before serving.
