Instructions

  1. In a large bowl, combine the flour and cold cubed butter. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  2. Sprinkle cold water over the flour mixture, 1 tablespoon at a time, and gently mix until the dough comes together. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. In a separate bowl, mix the pitted cherries, sugar, cornstarch, and almond extract until well combined.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out one disc of the chilled dough on a floured surface to fit a 9-inch pie dish. Place the rolled dough into the pie dish.
  6. Pour the cherry filling into the prepared pie crust.
  7. Roll out the second disc of dough and place it over the cherry filling. Trim and crimp the edges to seal the pie.
  8. Brush the top crust with the beaten egg for a golden finish.
  9. Make a few small slits on the top crust to allow steam to escape during baking.
