Ingredients

  • 500g fresh spinach, chopped
  • 1 onion, finely chopped
  • 200g feta cheese, crumbled
  • 3 eggs
  • 1/2 cup sour cream
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package phyllo dough

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix together the chopped spinach, onion, feta cheese, eggs, sour cream, olive oil, salt, and black pepper.
  3. Layer half of the phyllo sheets in a greased baking dish, brushing each sheet with olive oil.
  4. Spread the spinach mixture over the phyllo sheets.
  5. Layer the remaining phyllo sheets on top, brushing each sheet with olive oil.
  6. Bake in the preheated oven for 40-45 minutes, or until the phyllo is golden brown.
  7. Let it cool for a few minutes before slicing and serving.
