Plantain and Bean Stew (Igitoke n'Imigati)
Igitoke n'Imigati, or Plantain and Bean Stew, is a traditional Rwandan dish that is hearty, flavorful, and easy to make. This stew is a perfect combination of sweet and savory flavors, making it a popular choice for a comforting meal.
Ingredients
- 2 ripe plantains, peeled and sliced
- 1 cup dried red beans, soaked overnight
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin
- 1 tsp paprika
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Stir in the tomatoes, cumin, and paprika, and cook for a few minutes until the tomatoes are softened.
- Add the soaked red beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the sliced plantains to the pot and continue to simmer for an additional 15-20 minutes, or until the beans and plantains are tender.
- Season with salt and pepper to taste. Serve the Igitoke n'Imigati hot, and enjoy!
