Plantain and Bean Stew (Igitoke n'Imigati)

Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 cup dried red beans, soaked overnight
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Stir in the tomatoes, cumin, and paprika, and cook for a few minutes until the tomatoes are softened.
  3. Add the soaked red beans and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Add the sliced plantains to the pot and continue to simmer for an additional 15-20 minutes, or until the beans and plantains are tender.
  5. Season with salt and pepper to taste. Serve the Igitoke n'Imigati hot, and enjoy!
