Plantain and Black Bean Quesadillas (Quesadillas de Plátano y Frijoles Negros)

Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 small flour tortillas
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • 1 small red onion, thinly sliced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the sliced plantains and cook for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of oil and sauté the red onion until softened.
  3. Add the black beans, cumin, chili powder, salt, and pepper to the skillet with the onions. Cook for 2-3 minutes, then remove from heat.
  4. Place a tortilla in the skillet and sprinkle a layer of cheese on one half of the tortilla. Add a few slices of cooked plantain and a spoonful of the black bean mixture on top of the cheese. Fold the tortilla in half and cook for 2-3 minutes on each side until the cheese is melted and the tortilla is crispy.
  5. Repeat with the remaining tortillas and fillings.
  6. Serve the quesadillas hot, with your choice of toppings such as salsa, guacamole, or sour cream.
