Plantain And Black Bean Stew

Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, paprika, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
  3. Add the sliced plantains and diced tomatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and black beans. Season with salt and pepper. Bring the stew to a simmer and cook for 20-25 minutes, or until the plantains are tender.
  5. Adjust the seasoning if needed and serve the plantain and black bean stew hot.
