Plantain And Black Bean Stew
This Plantain and Black Bean Stew is a traditional dish from Sierra Leone that is hearty, flavorful, and perfect for a cozy night in.
Ingredients
- 2 ripe plantains, peeled and sliced
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, paprika, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
- Add the sliced plantains and diced tomatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and black beans. Season with salt and pepper. Bring the stew to a simmer and cook for 20-25 minutes, or until the plantains are tender.
- Adjust the seasoning if needed and serve the plantain and black bean stew hot.
