Ingredients
- 2 ripe plantains, peeled and sliced
- 1 cup dried black beans, soaked overnight
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 3 cups vegetable broth
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the sliced plantains and diced red bell pepper to the pot, and cook for 5 minutes, stirring occasionally.
- Stir in the soaked black beans, ground cumin, paprika, cayenne pepper, salt, and pepper. Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the plantains and black beans are tender.
- Once the stew is ready, adjust the seasoning if needed and serve hot.
