Plantain and Black Bean Stew (Igitoke n'Imigati)

Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 cup dried black beans, soaked overnight
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 3 cups vegetable broth
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the sliced plantains and diced red bell pepper to the pot, and cook for 5 minutes, stirring occasionally.
  3. Stir in the soaked black beans, ground cumin, paprika, cayenne pepper, salt, and pepper. Pour in the vegetable broth and bring the stew to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the plantains and black beans are tender.
  5. Once the stew is ready, adjust the seasoning if needed and serve hot.
