Plantain and Black Bean Stew (Vigorón)

Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 cup black beans, cooked
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tomato, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft.
  2. Add the sliced plantains to the pot and cook until they start to caramelize.
  3. Stir in the cooked black beans, chopped tomato, cumin, and oregano. Cook for a few minutes to allow the flavors to meld.
  4. Pour in the vegetable broth and bring the stew to a simmer. Let it cook for about 30 minutes, or until the plantains are tender.
  5. Season with salt and pepper to taste.
