Plantain and Black Bean Stew (Vigorón)
Vigorón is a traditional Nicaraguan dish that consists of a flavorful stew made with plantains and black beans. This hearty and satisfying dish is a staple in Nicaraguan cuisine, and it's perfect for a comforting meal on a chilly day.
Ingredients
- 2 ripe plantains, peeled and sliced
- 1 cup black beans, cooked
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tomato, chopped
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are soft.
- Add the sliced plantains to the pot and cook until they start to caramelize.
- Stir in the cooked black beans, chopped tomato, cumin, and oregano. Cook for a few minutes to allow the flavors to meld.
- Pour in the vegetable broth and bring the stew to a simmer. Let it cook for about 30 minutes, or until the plantains are tender.
- Season with salt and pepper to taste.
- Serve the vigorón hot, garnished with fresh cilantro if desired.
