Ingredients
- 2 ripe plantains, peeled and mashed
- 1 cup grated cheese (such as queso fresco or mozzarella)
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1 egg
- 1/4 cup milk
- Vegetable oil for frying
Instructions
- In a large bowl, combine the mashed plantains, grated cheese, flour, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the egg and milk. Add this mixture to the plantain and cheese mixture, and stir until well combined.
- Heat vegetable oil in a deep skillet over medium heat.
- Scoop spoonfuls of the plantain and cheese batter and carefully drop them into the hot oil. Fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
