Plantain and Cheese Fritters (Buñuelos de Plátano y Queso)

Ingredients

  • 2 ripe plantains, peeled and mashed
  • 1 cup grated cheese (such as queso fresco or mozzarella)

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 egg
  • 1/4 cup milk
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the mashed plantains, grated cheese, flour, baking powder, salt, and cinnamon.
  2. In a separate bowl, whisk together the egg and milk. Add this mixture to the plantain and cheese mixture, and stir until well combined.
  3. Heat vegetable oil in a deep skillet over medium heat.
  4. Scoop spoonfuls of the plantain and cheese batter and carefully drop them into the hot oil. Fry until golden brown, about 3-4 minutes per side.
