Plantain and Cheese Stuffed Peppers (Pimientos Rellenos de Plátano y Queso)

Ingredients
- 4 large bell peppers
- 2 ripe plantains, peeled and sliced
- 1 cup of grated cheese
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the sliced plantains to the skillet and cook until they are soft and slightly caramelized.
- Remove the skillet from the heat and stir in the grated cheese. Season with salt and pepper.
- Stuff the bell peppers with the plantain and cheese mixture.
- Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender.
- Serve the stuffed peppers hot and enjoy!
