Plantain and Vegetable Stir-Fry (Igitoke n'Imigati n'Imifuka)
Igitoke n'Imigati n'Imifuka, or Plantain and Vegetable Stir-Fry, is a popular dish in Rwandan cuisine that is both nutritious and delicious. This recipe combines the sweetness of ripe plantains with the freshness of mixed vegetables, creating a flavorful and satisfying meal.
Ingredients
- 2 ripe plantains, peeled and sliced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon curry powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the sliced plantains and cook until golden brown, about 3-4 minutes per side. Remove from the pan and set aside.
- In the same pan, add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the green beans, bell pepper, and tomatoes to the pan. Cook for 5-6 minutes, or until the vegetables are tender-crisp.
- Stir in the curry powder, paprika, and cayenne pepper (if using). Season with salt and pepper to taste.
- Return the cooked plantains to the pan and gently toss to combine with the vegetables and spices.
- Remove from heat and serve the plantain and vegetable stir-fry hot.
