Ingredients
- 4 ripe plantains
- 1 red onion, thinly sliced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 jalapeño, seeded and finely chopped
- 1/2 cup chopped cilantro
- 1/2 cup lime juice
- 1/4 cup orange juice
- Salt and pepper to taste
Instructions
- Peel the plantains and cut them into small cubes.
- In a large bowl, combine the plantains, red onion, red bell pepper, cherry tomatoes, jalapeño, and cilantro.
- Pour the lime juice and orange juice over the mixture and toss to combine.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes before serving.
