Plantain Dumplings (mofongo Dumplings)

Ingredients
- 3 ripe plantains, peeled and sliced
- 1 cup of cooked and shredded chicken
- 1/2 cup of diced onions
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of vegetable oil
Instructions
- In a large bowl, mash the ripe plantains until smooth.
- Divide the mashed plantains into small portions and flatten each portion into a disc shape.
- In a separate bowl, mix the shredded chicken, diced onions, minced garlic, salt, and black pepper.
- Place a spoonful of the chicken mixture in the center of each plantain disc.
- Fold the plantain disc over the filling and seal the edges to form a dumpling.
- Heat the vegetable oil in a skillet over medium heat.
- Carefully place the dumplings in the skillet and cook until golden brown on both sides.
- Remove the dumplings from the skillet and drain on paper towels.
- Serve the plantain dumplings hot and enjoy!
