Plantain Dumplings (mofongo Dumplings)

Ingredients

  • 3 ripe plantains, peeled and sliced
  • 1 cup of cooked and shredded chicken
  • 1/2 cup of diced onions
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of vegetable oil

Instructions

  1. In a large bowl, mash the ripe plantains until smooth.
  2. Divide the mashed plantains into small portions and flatten each portion into a disc shape.
  3. In a separate bowl, mix the shredded chicken, diced onions, minced garlic, salt, and black pepper.
  4. Place a spoonful of the chicken mixture in the center of each plantain disc.
  5. Fold the plantain disc over the filling and seal the edges to form a dumpling.
  6. Heat the vegetable oil in a skillet over medium heat.
  7. Carefully place the dumplings in the skillet and cook until golden brown on both sides.
  8. Remove the dumplings from the skillet and drain on paper towels.
  9. Serve the plantain dumplings hot and enjoy!
