Ingredients
- 2 ripe plantains
- 1 cup cooked black beans
- 1/2 cup diced onion

- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the plantain slices to the skillet and cook for 3-4 minutes on each side, until golden brown.
- Remove the plantains from the skillet and place them on a paper towel to drain excess oil.
- In a separate skillet, sauté the diced onion and minced garlic until softened.
- Add the cooked black beans, cumin, salt, and black pepper to the skillet with the onions and garlic. Cook for 5 minutes, smashing the beans with a fork as they cook.
- Place the cooked plantains on a cutting board and use a flat surface to smash them into thick discs.
- Return the smashed plantains to the skillet with the beans, and cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Remove from heat and serve the plantain fritters with smashed beans hot.
