Ingredients

  • 2 ripe plantains
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons vegetable oil

Instructions

  1. Peel the plantains and cut them into chunks. Place them in a blender or food processor.
  2. Add the eggs, flour, baking powder, salt, cinnamon, sugar, and vanilla extract to the blender or food processor.
  3. Blend the mixture until smooth.
  4. Heat the vegetable oil in a skillet over medium heat.
  5. Pour the plantain batter into the skillet to form pancakes.
  6. Cook for 3-4 minutes on each side, until golden brown.
  7. Remove from the skillet and serve warm.
