Plantain Pancakes

Ingredients
- 2 ripe plantains
- 2 eggs
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons vegetable oil
Instructions
- Peel the plantains and cut them into chunks. Place them in a blender or food processor.
- Add the eggs, flour, baking powder, salt, cinnamon, sugar, and vanilla extract to the blender or food processor.
- Blend the mixture until smooth.
- Heat the vegetable oil in a skillet over medium heat.
- Pour the plantain batter into the skillet to form pancakes.
- Cook for 3-4 minutes on each side, until golden brown.
- Remove from the skillet and serve warm.
