Ingredients
- 2 ripe plantains, mashed
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 tablespoons brown sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons milk
- 2 tablespoons butter, for cooking
Instructions
- In a large bowl, mix together the mashed plantains, eggs, flour, baking powder, salt, cinnamon, brown sugar, vanilla extract, and milk until well combined.
- Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.
- Pour 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
- Serve the plantain pancakes warm with your favorite toppings.
