Ingredients

  • 2 ripe plantains, mashed
  • 2 eggs
  • 1/4 cup all-purpose flour

  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 tablespoons butter, for cooking

Instructions

  1. In a large bowl, mix together the mashed plantains, eggs, flour, baking powder, salt, cinnamon, brown sugar, vanilla extract, and milk until well combined.
  2. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.
  3. Pour 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  4. Repeat with the remaining batter, adding more butter to the skillet as needed.
  5. Serve the plantain pancakes warm with your favorite toppings.
