Plasas (bitter Tomato Sauce)
Plasas is a traditional Gambian dish that features a rich and flavorful bitter tomato sauce. This dish is a staple in Gambian cuisine and is often served with rice or couscous.
Ingredients
- 2 cups bitter tomatoes, chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 1 cup peanut butter
- 1 cup water
- 1 cup smoked fish, flaked
- 1 cup spinach, chopped
- Salt to taste
Instructions
- In a large pot, sauté the onions and garlic until translucent.
- Add the bitter tomatoes and scotch bonnet pepper, and cook for 10 minutes.
- Stir in the peanut butter and water, and simmer for 15 minutes.
- Add the smoked fish and spinach, and cook for an additional 10 minutes.
- Season with salt to taste and serve hot with rice or couscous.
