Ingredients

  • 2 cups bitter tomatoes, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped
  • 1 cup peanut butter
  • 1 cup water
  • 1 cup smoked fish, flaked
  • 1 cup spinach, chopped
  • Salt to taste

Instructions

  1. In a large pot, sauté the onions and garlic until translucent.
  2. Add the bitter tomatoes and scotch bonnet pepper, and cook for 10 minutes.
  3. Stir in the peanut butter and water, and simmer for 15 minutes.
  4. Add the smoked fish and spinach, and cook for an additional 10 minutes.
  5. Season with salt to taste and serve hot with rice or couscous.
