Plov (crimean Lamb Pilaf)
Plov, also known as Crimean Lamb Pilaf, is a traditional dish from Cossack cuisine that features tender lamb, aromatic rice, and flavorful spices. This hearty one-pot meal is perfect for gatherings and special occasions.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups long-grain rice
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 4 cloves garlic, minced
- 1/2 cup vegetable oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/4 tsp ground cloves
- Salt and pepper to taste
- 4 cups beef or lamb broth
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the sliced onion and julienned carrots. Sauté until the vegetables are softened.
- Add the minced garlic, cumin, paprika, coriander, and cloves. Cook for 1-2 minutes until fragrant.
- Return the browned lamb to the pot. Season with salt and pepper.
- Add the rice and stir to combine with the lamb and vegetables.
- Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot.
