Plov (fragrant Lamb Pilaf)

Ingredients
- 2 cups basmati rice
- 1 lb lamb, cut into chunks
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 4 cups hot water
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp paprika
- 1/2 tsp ground turmeric
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the sliced onion and cook until translucent.
- Add the julienned carrots and cook for a few minutes until they start to soften.
- Add the cumin seeds, coriander seeds, paprika, and ground turmeric. Stir to combine with the vegetables.
- Return the browned lamb to the pot and mix everything together.
- Add the basmati rice to the pot and stir to coat the rice with the oil and spices.
- Pour the hot water over the rice and lamb. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve the fragrant lamb pilaf hot.
