Plov (saffron-infused Chicken Pilaf)
Plov, also known as Osh, is a traditional Uzbek dish that consists of saffron-infused chicken pilaf. This aromatic and flavorful dish is a staple in Uzbek cuisine and is often served at special occasions and gatherings.
Ingredients
- 2 cups basmati rice
- 1.5 lbs chicken, cut into pieces
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 1/2 tsp saffron threads
- 1 tsp cumin seeds
- 1 tsp paprika
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the sliced onion and julienned carrots. Cook until the vegetables are soft and caramelized.
- Add the saffron threads, cumin seeds, and paprika to the pot. Stir to combine with the vegetables.
- Return the browned chicken pieces to the pot. Add the basmati rice and chicken broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot.
