Plov (saffron-infused Chicken Pilaf)

Plov, also known as Osh, is a traditional Uzbek dish that consists of saffron-infused chicken pilaf. This aromatic and flavorful dish is a staple in Uzbek cuisine and is often served at special occasions and gatherings.

Plov (saffron-infused Chicken Pilaf)

Ingredients

  • 2 cups basmati rice
  • 1.5 lbs chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 3 carrots, julienned
  • 1/2 cup vegetable oil
  • 1/2 tsp saffron threads
  • 1 tsp cumin seeds
  • 1 tsp paprika
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the sliced onion and julienned carrots. Cook until the vegetables are soft and caramelized.
  3. Add the saffron threads, cumin seeds, and paprika to the pot. Stir to combine with the vegetables.
  4. Return the browned chicken pieces to the pot. Add the basmati rice and chicken broth. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the pilaf with a fork and serve hot.
