Plov (spiced Lamb And Rice Casserole)

Ingredients

  • 2 cups basmati rice
  • 1 pound lamb, cubed
  • 1 onion, chopped
  • 3 carrots, julienned
  • 1/2 cup vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb and cook until browned.
  2. Add the chopped onion and cook until softened.
  3. Stir in the cumin, coriander, paprika, and turmeric, and cook for 1-2 minutes until fragrant.
  4. Add the julienned carrots and rice to the pot, and stir to combine with the lamb and spices.
