Plov (spiced Lamb And Rice Casserole)

Ingredients
- 2 cups basmati rice
- 1 pound lamb, cubed
- 1 onion, chopped
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb and cook until browned.
- Add the chopped onion and cook until softened.
- Stir in the cumin, coriander, paprika, and turmeric, and cook for 1-2 minutes until fragrant.
- Add the julienned carrots and rice to the pot, and stir to combine with the lamb and spices.
- Pour in the chicken broth, season with salt and pepper, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the plov with a fork, and serve hot.
