Plov (spiced Lamb And Rice Pilaf)
Plov is a traditional dish in Bukharan Jewish Cuisine, featuring spiced lamb and rice pilaf. It's a flavorful and aromatic one-pot meal that is perfect for gatherings and special occasions.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 4 cups chicken or beef broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground turmeric
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the sliced onion and julienned carrots. Cook until the vegetables are soft and the onions are translucent.
- Stir in the rice, cumin, paprika, coriander, turmeric, salt, and pepper. Cook for 2-3 minutes, stirring constantly.
- Return the browned lamb to the pot and pour in the chicken or beef broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot.
