Plov (spiced Lamb And Rice Pilaf)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 3 carrots, julienned
  • 1/2 cup vegetable oil
  • 4 cups chicken or beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the sliced onion and julienned carrots. Cook until the vegetables are soft and the onions are translucent.
  3. Stir in the rice, cumin, paprika, coriander, turmeric, salt, and pepper. Cook for 2-3 minutes, stirring constantly.
  4. Return the browned lamb to the pot and pour in the chicken or beef broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Fluff the pilaf with a fork and serve hot.
