Plum Cake (Slivkový koláč)
Slivkový koláč, or Slovak Plum Cake, is a traditional dessert that is popular in Slovakia, especially during the plum season in late summer and early autumn. This delicious cake is made with fresh plums and a buttery, crumbly dough, creating a perfect balance of sweet and tangy flavors.
Ingredients
- 500g fresh plums, pitted and halved
- 250g all-purpose flour
- 150g granulated sugar
- 150g unsalted butter, cold and diced
- 1 egg
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- A pinch of salt
Instructions
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold diced butter to the dry ingredients and mix until crumbly.
- Beat the egg and vanilla extract together, then add it to the flour mixture. Mix until the dough comes together.
- Press two-thirds of the dough into the bottom of a greased baking pan to form the base.
- Arrange the halved plums on top of the dough base.
- Crumble the remaining dough over the plums to create a streusel topping.
- Bake in a preheated oven at 180°C (350°F) for 40 minutes or until the top is golden brown.
- Allow the cake to cool before serving.
