Slivkový koláč, or Slovak Plum Cake, is a traditional dessert that is popular in Slovakia, especially during the plum season in late summer and early autumn. This delicious cake is made with fresh plums and a buttery, crumbly dough, creating a perfect balance of sweet and tangy flavors.

Plum Cake (Slivkový koláč)

Ingredients

  • 500g fresh plums, pitted and halved
  • 250g all-purpose flour
  • 150g granulated sugar
  • 150g unsalted butter, cold and diced
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. Add the cold diced butter to the dry ingredients and mix until crumbly.
  3. Beat the egg and vanilla extract together, then add it to the flour mixture. Mix until the dough comes together.
  4. Press two-thirds of the dough into the bottom of a greased baking pan to form the base.
  5. Arrange the halved plums on top of the dough base.
  6. Crumble the remaining dough over the plums to create a streusel topping.
  7. Bake in a preheated oven at 180°C (350°F) for 40 minutes or until the top is golden brown.
  8. Allow the cake to cool before serving.
