Plum Dumplings (zwetschkenknödel)

Ingredients

  • 8 Italian plums, pitted
  • 2 cups mashed potatoes
  • 1 1/2 cups all-purpose flour
  • 1/4 cup semolina
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup breadcrumbs
  • 4 tbsp vegan butter

Instructions

  1. In a large bowl, mix together the mashed potatoes, flour, semolina, sugar, salt, and cinnamon to form a dough.
  2. Divide the dough into 8 equal portions and flatten each portion into a disc.
  3. Place a pitted plum in the center of each disc and wrap the dough around the plum, sealing it completely.
  4. In a pot of boiling water, carefully drop the dumplings and cook for 12-15 minutes, or until they float to the surface.
  5. In a separate pan, melt the vegan butter and add the breadcrumbs. Toast the breadcrumbs until golden brown.
  6. Remove the dumplings from the water and roll them in the toasted breadcrumbs.
  7. Serve the plum dumplings warm and enjoy!
