Ingredients
- 8 Italian plums, pitted
- 2 cups mashed potatoes
- 1 1/2 cups all-purpose flour
- 1/4 cup semolina
- 1/4 cup sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup breadcrumbs
- 4 tbsp vegan butter
Instructions
- In a large bowl, mix together the mashed potatoes, flour, semolina, sugar, salt, and cinnamon to form a dough.
- Divide the dough into 8 equal portions and flatten each portion into a disc.
- Place a pitted plum in the center of each disc and wrap the dough around the plum, sealing it completely.
- In a pot of boiling water, carefully drop the dumplings and cook for 12-15 minutes, or until they float to the surface.
- In a separate pan, melt the vegan butter and add the breadcrumbs. Toast the breadcrumbs until golden brown.
- Remove the dumplings from the water and roll them in the toasted breadcrumbs.
- Serve the plum dumplings warm and enjoy!
